Growing up as market gardeners, there was always a passion for the best quality produce. This same passion has now developed a sublime Single Malt Whisky.
Hand crafted, barrel-aged and matured. Made with the finest Australian malted barley and water sourced from our distillery's aquifer. Packed and protected the same way we packed our prized produce.
Expertly distilled in our 1200-litre Copper Pot Still, ‘Pando’, then aged in locally sourced, shaven and charred American oak barrels for a rich, peppery flavour. This is followed by further resting in Kentucky bourbon barrels to add complexity with smooth fruity notes. Finally, returned to the American oak barrels, reaching the pinnacle of maturation.
The Australian climate enables an acceleration of the maturation process benefitting the flavour profile and delivering a smooth, confident taste.

TASTING NOTES
COLOUR
Deep gold autumn barley.
NOSE
Rich barley aromas intertwine with subtle spiced oak and delicate heather honey.
TASTE
Warm and rounded, unveiling layers of dark chocolate with hints of gently spiced marzipan and creamy vanilla. The palate evolves into a long, sweet journey with fruity undertones.
FINISH
Long and rewarding, with flavours of malt and a subtle hint of late-developing mocha, complemented by a lingering sweetness of honey. Ends with a warming finish.
